What's the exact problem? Getting the subtitles to be displayed on a standalone or on the PC?
If the problem is concerning the standalone than I can tell you that it has to support them!
If it does you usually have to name the subtitle file exactly like the AVI file (except the file extension of course):
Something.Is.Out.There.DVDrip.XviD+MP3.AVI <--- video
Something.Is.Out.There.DVDrip.XviD+MP3.SRT <--- subs
There are several subtitle formats, which use the file-extension .SUB ...

That format is image based
and thus you can't just convert them to text like that. You need an optical character recognition (OCR) tool.
Like elchupacabra mentioned you can do it with AviDemux. However OCR usually results in typos in the converted subtitle file - so check them afterwards!!
VirtualDub seems to have a feature to insert the subtitles into the video stream -> hardcoded subs. Although I haven't used that ever.
