being as i am when the tv showed a fortnightly magazine called
Hong Kong Legends i said hell yeah and subscribed. one of the future dvds is "A Chinese Ghost Story" which i was going to rip and release since its horrorish tho not sure where in the collection it is, hopefully this year. what is the best ripping and encoding out there for a non english film. and would it be better to leave it in original language and have hard subs and encode duel language and had subs as a .sub/.idx file. thats if people want this film ripped or not

Personally I say always original language and soft subs, either vobsub or subrip, makes no difference to me. Dual language can be good if the sound is mono and you're doing a 1/3 DVD sized rip (they were around 120 minutes each iirc).
btw I know I had three of the Chinese Ghost Story parts burned somewhere, but don't remember the quality. I know for sure there were rips though.

I can't find the CDs, but ed2k search yields these:
ed2k: A.Chinese.Ghost.Story.(1987).Mandarin.DVDRip.avi [698.47 Mb] [ Stats] - which has no tag and is Divx3 @ ~1050kbps (and only 92 minutes, so my memory is not apparently as good as I thought:)), so it can't be too great
ed2k: A.Chinese.Ghost.Story.III.1991.DVDRip.XviD-VH-PROD.avi [700.79 Mb] [ Stats] - pretty good 103 minutes of XviD @ ~950 kbps
I also see all three in WAF version, which to me are never good.
Isonews says all three has been done by VH-PROD, then 1 & 2 PROPER'ed...

°°°Ű۲° Ű Anything that could go wrong while ripping these, has. Ű °˛ŰŰ°°
°°°Ű۲° Ű After testing 3 or 4 different methods for encoding at Ű °˛ŰŰ°°
°°°Ű۲° Ű 25 fps, it was determined that repal achieved far better Ű °˛ŰŰ°°
°°°Ű۲° Ű results than any of the others. The DVD quality of these Ű °˛ŰŰ°°
°°°Ű۲° Ű movies is pitiful to say the least. I was forced to use Ű °˛ŰŰ°°
°°°Ű۲° Ű several quality filters on top of the normal encoding Ű °˛ŰŰ°°
°°°Ű۲° Ű ones. Once I finally achieved a good avg DRF, I moved on Ű °˛ŰŰ°°
°°°Ű۲° Ű to the next problem, audio. This was really nothing big Ű °˛ŰŰ°°
°°°Ű۲° Ű just that there were 2 chinese audio tracks, and both had Ű °˛ŰŰ°°
°°°Ű۲° Ű to be encoded to find the language that fit the language Ű °˛ŰŰ°°
°°°Ű۲° Ű spoken by the actors. And now to the real headache... Ű °˛ŰŰ°°
°°°Ű۲° Ű subtitles... I regret to inform you that the subtitles Ű °˛ŰŰ°°
°°°Ű۲° Ű would not extract off the dvd/vobs. I resorted to using Ű °˛ŰŰ°°
°°°Ű۲° Ű subrip which did a halfway decent job, however, after Ű °˛ŰŰ°°
°°°Ű۲° Ű running it, only about 2/3 of the subs were extracted. Ű °˛ŰŰ°°
°°°Ű۲° Ű The rest of the subs had to be manually typed in and the Ű °˛ŰŰ°°
°°°Ű۲° Ű timestamps manually synced. So unfortunately I was Ű °˛ŰŰ°°
°°°Ű۲° Ű unable to process the other languages, because I am not Ű °˛ŰŰ°°
°°°Ű۲° Ű familiar with any of the other languages in order to fix Ű °˛ŰŰ°°
°°°Ű۲° Ű speech syntax, etc. Ű °˛ŰŰ°°
°°°Ű۲° Ű Ű °˛ŰŰ°°
°°°Ű۲° Ű OK, on to the important technical items. The audio was Ű °˛ŰŰ°°
°°°Ű۲° Ű clearly done in a studio, and not synced as nice as most Ű °˛ŰŰ°°
°°°Ű۲° Ű most of us are used to. For the majority of the time the Ű °˛ŰŰ°°
°°°Ű۲° Ű sync is fine, but in a few parts one sentence will be Ű °˛ŰŰ°°
°°°Ű۲° Ű right on, while the next sentence will be just minutely Ű °˛ŰŰ°°
°°°Ű۲° Ű off. Ű °˛ŰŰ°°
°°°Ű۲° Ű Ű °˛ŰŰ°°

ŰŰ What VH-PROD described as poorly post synchronization ŰŰ
ŰŰ is just the conclusion they made from analyzing a dubbed ŰŰ
ŰŰ audio track. I know I'm not a master of Asian languages, ŰŰ
ŰŰ but since this UK DVD only had the Cantonese audio track ŰŰ
ŰŰ it makes things alot easier. You can't really go wrong. ŰŰ
ŰŰ Comparison sample of VH-PROD's rip is included of course. ŰŰ
ŰŰ You'll notice the great difference in quality. ŰŰ
ŰŰ The synch part can best be viewed 37 seconds into the ŰŰ
ŰŰ iNSPiRE sample, and 27 seconds into the VH-PROD one. ŰŰ
ŰŰ You'll see that this new rip synchs perfectly with the ŰŰ
ŰŰ correct (Cantonese) audio. Enjoy this beautiful masterpiece. ŰŰ

hardsubbing is never better, in fact imo its not even an option is you give a crap about quality.  It is a terrible option and should be avoided at all costs. There's no benefit to it, the only people that need the video permantly defacing are people that would be re-encoding it anyway (ie. they have a sucky setup that doesn't support softsubs). They'd be re-encoding to DVDr anyway, and its trivial for them to burn them in. So there's really no reason what so ever to go for hardsubs under any usual circumstance.
imo you have one option for foreign movies, other wise you either seriously ruin the movie artistically (dubbing is pathetic, it renders films unwatchable 9 times out of 10, i doubt its only me that can't watch that crap either) or technically (dubbing is out of sync and usually very poorly done compared to original dub; hardsubbing adversely effects compressibility and premanantly defaces the video).
Original language is language netural when combined with softsubs as they can be changed to any language a viewer desires. Even though they might not be able to understand what is spoken directly, the words match the mouths and the sound quality will be better so its better than any other dub. If you put a foreign dub on it, it ruins the movie for native speakers, all other language speakers and infact a significant number of people who speak the language its been dubbed in to, so its a really bad option imo.
Vobsubs can be positioned anywhere on screen, in any colour or any contrast. SRTs aren't quite as customisable, but you still have a lot of control. hardsubbing permantly places the subs, so not only does it alienate viewers, and the original language audience, and not only does it decrrease compressibility, it covers part of the picture permantly and can often lead to problems like poor contrast with the background of the image.
Dual Audio is a bad choice imo. You have 50% wasted audio no matter how you look at it. 50% waste is 50% too much waste 
To me there's no ifs or buts, its completely unfounded to choose any option other than original audio + single audio + soft subs for an encode, its unmentionable to do the others unless there's an exceptional circumstance like the original audio being unmentionable, the hardsubs are already in the source or, well i'm not really sure i can think of a scenario where dual audio is ever a good option . Anything else is at the expense of either artistic or technical quality standards (that being making it the best it an be), and I have too high a regard for the movies i rip to do that to them... mostly

It's not, I hate both hardsubs and dubs.
Hence I'm often pissed off at Anime ripping groups, since they usually believe it's only one of the two above 
btw I don't think I've seen either of the XviD rips on ed2k and even if, the bitrate in both cases is still only 900 some kbps.

gknot is just a launcher for vobsub, so try rip the subs via that, shouldn't cause a problem. However, do check them afterwards. I've had subs that just weren't in sync. I even had one dvd that had all the time indexes running backwards
